Beth is a Registered Dietitian and dual graduate student at the University at Buffalo. She is pursuing her Master of Science in Nutrition as well as her Master of Public Health in Community Health and Health Behavior. She holds a BS in Dietetics from SUNY College Oneonta with a minor in Health and Fitness. At the Food Lab, Beth has worked on a qualitative analysis of survey data from Growing Green’s youth program with the Massachusetts Avenue Project (MAP) and also edited the Final Report for the Safe Routes to School Program with the Town of Amherst and Sweet Home Central School District. Currently, Beth is working on a literature review of how and why people travel to shop at certain grocery stores, and is assisting in coordinating the Buffalo Neighborhood Food Project Evaluation Study. She is also working in conjunction with Grassroots Gardens presenting nutrition workshops and developing educational materials for the organization’s gardeners.
Prior to this position, Beth completed her dietetic internship at UB working at Roswell Park, VA Medical Center, ECMC, Terrace View, Buffalo General, Women and Children’s Hospital, Sisters Hospital, UB Sports Nutrition, and Sodexo. As an undergraduate student she interned with SUNY Oneonta’s Health and Wellness Center, where she developed and presented health and wellness programs. She enjoys connecting with the community through nutrition and wellness education.
